Pork Chops With Spiced Prunes

Pork chops are browned then baked with a tangy sauce. The pork chops are served with a cooked spiced prune mixture.

Ingredients:

  • 6 loin pork chops, about 3/4 to 1-inch thick
  • 1/4 cup ketchup
  • 2 tablespoons lemon juice
  • 1/2 teaspoon dry mustard
  • 1 teaspoon Worcestershire sauce
  • 1 small onion, halved and sliced
  • 1/4 cup hot water
  • .
  • Spiced Prunes
  • 8 ounces dried prunes
  • 1 1/2 cups hot water
  • 2 tablespoons vinegar
  • 1/2 teaspoon cinnamon
  • 2 whole cloves
  • 2 tablespoons brown sugar

Preparation:

Trim fat from chops. Combine the ketchup, lemon juice, mustard, and Worcestershire sauce and rub over chops. Heat oil in a large skillet; brown chops on both sides. If skillet cannot be moved to the oven, transfer chops and drippings to a baking dish. Top the chops with onion and add the 1/4 cup of water. Cover with lid or foil and bake at 350° for about 50 to 60 minutes. Make spiced prunes. In a saucepan, combine prunes with the 1 1/2 cups hot water; simmer until tender, about 25 to 30 minutes. Add the vinegar, spices, and brown sugar. Simmer for 10 minutes longer. Serve with the pork chops.
Serves 6.
