Spicy Marmalade Chops With Jalapeno Pepper

These pork chops are made with a sweet marmalade sauce with jalapeno peppers and a little wine. These make a tasty everyday family meal for a family on the go. The pork chops take about 30 to 40 minutes from start to finish.
If you don't like the heat, cut back on the peppers or omit them completely. And, feel free to use more chicken broth in place of the white wine.

Yield: Serves 4

Ingredients:

  • 4 pork chops, bone-in, about 1/2 to 3/4-inch thickness
  • salt and pepper
  • 3 tablespoons flour, divided (1 1/2 for pork, 1 1/2 for sauce)
  • 1 tablespoon olive oil
  • 2 tablespoons butter, divided
  • 1 tablespoon chopped canned and drained jalapeno peppers
  • 1/8 teaspoon cayenne pepper
  • 1/2 cup dry white wine
  • 3/4 cup chicken broth
  • 3/4 cup sweet orange marmalade

Preparation:

Sprinkle pork chops with salt and pepper; dust lightly with about 1 1/2 tablespoons of flour. Heat oil and 1 tablespoon of butter in a large skillet over medium heat. Brown pork chops for about 4 minutes on each side. Remove the chops and add the remaining 1 tablespoon of butter to the skillet. Stir the remaining flour into the butter and add the wine, broth, marmalade, jalapeno peppers, and cayenne. Stir until well blended. Add chops, cover, and simmer for about 25 to 30 minutes, until chops are cooked through.

Serves 4.
