Ingredients:
- 4 pork chops, about 3/4-inch thick
- olive oil
- salt and pepper
- 2 cups chicken broth
- 1 cup uncooked long-grain rice
- 1/4 cup chopped green bell pepper
- 3 green onions, chopped
- 1 tomato, peeled and diced
Preparation:
In a heavy skillet in a small amount of olive oil, brown pork chops. Transfer pork chops to a shallow baking dish; sprinkle with salt and pepper. Pour chicken broth over pork chops; add uncooked rice, green bell pepper, green onions, and diced tomatoes. Cover with foil and bake at 350° for 45 minutes to 1 hour, or until pork chops are tender and rice is done.Pork chop and rice bake recipe serves 4.
