Orange and Ginger Pork With Rice

Pan fry or bake lean pork cubes or use leftover cubed pork roast for this recipe.

Ingredients:

  • 1/4 cup cornstarch
  • 3 tablespoons brown sugar
  • 1 tablespoon soy sauce
  • 1/2 cup apricot nectar
  • 1/2 cup orange juice
  • 1 cup chicken broth
  • 1 can (11 ounces) Mandarin orange sections, drained
  • 1/2 teaspoon ground ginger
  • 1 green bell pepper, sliced
  • 1 red bell pepper, sliced
  • 4 cups cubed cooked pork
  • hot cooked rice for 6

Preparation:

In a large skillet, combine cornstarch and brown sugar. Stir in soy sauce and juices, along with the chicken broth. Bring to a boil over medium-high heat. Reduce heat to low and simmer for 5 minutes, stirring constantly. Add mandarin oranges, ginger, green and red bell pepper slices, and cooked pork. Heat thoroughly. Serve with hot cooked rice.
Serves 6.
