Ingredients:
- 1/4 cup cornstarch
- 3 tablespoons brown sugar
- 1 tablespoon soy sauce
- 1/2 cup apricot nectar
- 1/2 cup orange juice
- 1 cup chicken broth
- 1 can (11 ounces) Mandarin orange sections, drained
- 1/2 teaspoon ground ginger
- 1 green bell pepper, sliced
- 1 red bell pepper, sliced
- 4 cups cubed cooked pork
- hot cooked rice for 6
Preparation:
In a large skillet, combine cornstarch and brown sugar. Stir in soy sauce and juices, along with the chicken broth. Bring to a boil over medium-high heat. Reduce heat to low and simmer for 5 minutes, stirring constantly. Add mandarin oranges, ginger, green and red bell pepper slices, and cooked pork. Heat thoroughly. Serve with hot cooked rice.Serves 6.
