Skillet Pork Chops and Potatoes

Pork chops are cooked in the skillet with potatoes, spinach, tomato, and other ingredients.

Cook Time: 45 minutes

Ingredients:

  • 2 tablespoons vegetable oil
  • 4 pork chops, about 3/4-inch thick
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup beef broth
  • 3 medium potatoes, quartered
  • 1 pound fresh leaf spinach, torn
  • 1 large clove garlic, peeled and coarsely chopped
  • 1 large tomato, peeled and diced, about 1 cup

Preparation:

Heat oil in a large deep skillet over medium heat. Add pork chops; cook, turning to brown both sides. Sprinkle chops with 1/2 teaspoon of salt and 1/4 teaspoon pepper. Remove the pork chops from skillet. Add broth and potatoes to the pan drippings; cover skillet and cook for 15 minutes. Add garlic, remaining salt and pepper, spinach, and diced tomato. Arrange pork chops on top. Cover skillet and cook for about 10 to 15 minutes, until chops are tender and thoroughly heated.
Serves 4.

"I'm afraid my family didn't care much for this. Now in all fairness, I had to use frozen spinach and a can of tomatoes, not having fresh on hand nor time to run to the store to get them. Perhaps that would've made it better. I would suggest quartering the potatoes length-wise in longer, slimmer pieces rather than shorter and thicker. The potatoes took 45 min. to get soft enough to eat, cut the shorter, chunkier way. At least it was a healthier way to eat them as opposed to smothered in a cream soup gravy."
