Pork Chops with Orange Sauce

Pork chops with a flavorful orange sauce and orange sections, along with optional raisins. Serve these uncomplicated, tasty pork chops with a rice dish or baked potatoes.

Yield: Serves 4

Ingredients:

  • 4 pork chops, about 3/4 to 1-inch thickness
  • salt
  • 1/4 to 1/2 cup flour
  • 2 tablespoons vegetable oil
  • 1 to 2 navel oranges
  • 2 tablespoons granulated or brown sugar
  • 1 tablespoon cornstarch
  • 1/8 teaspoon allspice
  • 1 1/4 cups hot water
  • 3 tablespoons lemon juice
  • 1/4 cup orange juice
  • 1/4 cup golden or dark raisins, optional

Preparation:

Trim chops of excess fat; sprinkle both sides with salt and toss with the flour. Heat oil in a large skillet; brown chops on both sides. Section oranges and place sections on each pork chop. In a saucepan combine sugar with cornstarch and allspice; stir in the water. Cook, stirring, until thickened. Add lemon juice, orange juice, and raisins, if using. Pour over the pork chops. Cover and simmer for 30 to 45 minutes, until chops are tender.

Serves 4.
