Oven Barbecued Pork Chops

Oven barbecued pork chops, baked with a homemade spiced barbecue sauce. These make a very good weeknight meal for the family. Make the sauce the night before and refrigerate until cooking time.

INGREDIENTS:

  • 3/4 cup ketchup
  • 3/4 cup vinegar
  • 1 1/2 cups water
  • 1/2 cup chopped onion
  • 1 clove garlic, finely minced
  • 2 teaspoons salt
  • 1/2 teaspoon pepper
  • 1 tablespoon Worcestershrie sauce
  • 3 tablespoons light brown sugar
  • 1/8 to 1/4 teaspoon ground cayenne, or to taste
  • 6 to 8 thick center-cut loin chops

PREPARATION:

In a saucepan, combine ketchup, vinegar, water, onion, garlic, salt, pepper, Worcestershire sauce, cayenne, and brown sugar; blend well. Simmer over low heat for about 20 minutes, stirring occasionally.

Place chops in a large bowl. Pour sauce over the pork chops. Refrigerate for at least 3 hours. Arrange chops in a shallow baking dish then pour sauce over them. Bake, uncovered, at 350° for about 1 to 1 1/2 hours, or until chops are tender, basting occasionally.
Serves 4 to 6.

"This recipe was a bit tart. The vinegar seemed to overpower the rest of the ingredients. The sauce was not thick at all like barbecue sauce. If I make it again I would probably use a little cornstarch or flour to thicken it and less vinegar."
