Pork Chops With Apricots

Feel free to use peaches in this tasty skillet pork recipe. If you use canned apricots, add less syrup or sugar.

Ingredients:

  • 4 1-inch thick boneless pork chops
  • salt and pepper
  • 1 tablespoon olive oil
  • 1/2 cup chicken broth
  • 1/2 cup dry white wine or a blush wine
  • 4 green onions, sliced
  • 1 cup diced apricots
  • 2 teaspoons lemon juice
  • 2 tablespoons maple syrup or brown sugar, or to taste
