Pork Chops with Tomatoes and Garlic
Serve these tasty pork chops with mashed potatoes and a tossed salad.

Cook Time: 1 hour, 10 minutes

Total Time: 1 hour, 10 minutes

Ingredients:

  • 6 large pork chops
  • 1 medium onion, sliced
  • 2 cloves garlic, minced
  • 2 cans (14.5 ounces each) diced tomatoes
  • 1 1/4 cups chicken broth
  • 1 tablespoon thyme
  • salt and pepper, to taste

Preparation:

In a large skillet or Dutch oven, brown the pork chops on both sides. Drain off excess fat.

Add remaining ingredients to the pork chops; cover and simmer over medium-low heat for 1 hour, or until very tender.
Serve with hot cooked rice.
Serves 6.

This was a recipe I found by doing an internet search for ingredients I already had. This recipe also did not call for anything unusual that I didn't have lying around. We pared down the recipe to two chops and adjusted everything else accordingly. We also added fresh basil to the sauce. We used fresh tomatoes instead of canned, and used fresh thyme, as well. The flavor was delicous! Having plain rice as the side is the perfect pairing, as the rice soaks up the goodness of the sauce.
