Cook Time: 1 hour, 10 minutes
Ingredients:
- 6 large pork chops
- 1 medium onion, sliced
- 2 cloves garlic, minced
- 2 cans (14.5 ounces each) diced tomatoes
- 1 1/4 cups chicken broth
- 1 tablespoon thyme
- salt and pepper, to taste
Preparation:
In a large skillet or Dutch oven, brown the pork chops on both sides. Drain off excess fat.
Add remaining ingredients to the pork chops; cover and
simmer over medium-low heat for 1 hour, or until very tender.
Serve with hot cooked rice.
Serves 6.
