Pork Chops With Apples


This no-fuss pork chop and apple bake makes an easy weeknight family supper. Feel free to use dried cranberries in place of the raisins.

  • 6 pork chops, about 3/4-inch thick
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • salt and pepper
  • 3 medium tart apples, such as Granny Smith
  • 3 tablespoons molasses
  • 3 tablespoons flour
  • 2 cups hot water
  • 1 tablespoon cider vinegar
  • 1/2 cup raisins


Heat oven to 350°.

Sprinkle pork chops with salt and pepper. Heat butter and oil in a large heavy skillet over medium heat; brown the pork chops on both sides. With slotted spoon or spatula, transfer pork chops to a large shallow baking dish. Peel the apples and slice thinly; arrange the slices over pork chops. Drizzle molasses over the pork chops and apples.

Sprinkle flour over the skillet drippings; cook, stirring, for 1 to 2 minutes, until bubbly and lightly browned. Slowly stir in the hot water; cook until bubbly. Add vinegar, salt, and raisins. Pour the sauce over chops and apples in the baking dish. Cover and bake for 1 hour.
Serves 6.
