Pork Chop and Apple Bake

Pork chops and a frozen apple dish team up with stuffing and seasonings to make a tasty main dish.

Ingredients:

  • 1 package (12 ounces) frozen harvest apples, ( Stouffer's ), thawed
  • 1 tablespoon brown sugar, optional
  • 1/4 cup apple juice, broth, or water
  • 1 box (6 ounces) Stove Top Stuffing, cornbread or herb seasoned
  • 1 2/3 cups hot water
  • 1/2 cup golden raisins or dried cranberries
  • 4 pork chops, about 1/2 to 3/4 inch thick
  • Salt and pepper
  • 1 tablespoon olive oil

Preparation:

Heat oil over medium-high heat in a large skillet. Sprinkle chops with salt and pepper; brown for 2 to 3 minutes on each side.

Heat oven to 350°. Lightly grease a 3-quart baking dish. Spread apples over the bottom of the pan, sprinkle with brown sugar, and pour juice or broth over all. Arrange the browned chops over the apples.

In a bowl, combine the stuffing mix, hot water, and raisins; stir until well moistened. Spoon stuffing mix over the chops. Cover tightly with foil and bake for 40 minutes, or until pork is tender.
Serves 4.
