From Nancy: This recipe was handed down through my family. My best
guess is that it is a Danish dish, since I am only second generation in
this country.
Ingredients:
- pork chops or pork loin roast
- salt and pepper
- garlic powder
- 1 head cabbage
Preparation:
Pork and Brown Cabbage is the easiest thing to make and delicious. I use
either a pork loin roast or loin chops. Either works. First, I season
the pork with salt, pepper, and garlic powder. Then I brown the chops in
a heavy pot until very brown, but not burnt. This is key since the
cabbage will get its color and flavor from the carmelization of the pork.
After pork is sufficiently brown on all sides, I take a head of green
cabbage, core it, and cut it into eighths. Lower heat to med-low to low,
add cabbage and a little more salt, cover and simmer for 1 hour.
Stir,keep simmering and stirring until pork is falling apart and cabbage
in brown and totally wilted. Serve with bread and homemade applesauce.
