Pork Casserole with Mashed Sweet Potatoes

A pork casserole with leftover pork and mashed sweet potatoes.

Cook Time: 1 hour, 10 minutes

Ingredients:

  • 2 cups cubed cooked pork
  • 3 medium onion, sliced
  • 4 apples, peeled, cored, and sliced
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 1 1/4 cups seasoned chicken broth
  • 1/4 teaspoon salt, or to taste
  • 1/8 teaspoon pepper
  • 1/8 teaspoon poultry seasoning
  • 3 cups seasoned mashed sweet potatoes

Preparation:

In a large skillet over medium-low heat in 1 tablespoon butter or oil, lightly brown pork and onions with apple. Remove with slotted spoon to a 2-quart casserole. Blend flour into butter in skillet. Gradually add chicken broth, stirring constantly, until thickened. Season with salt, pepper, and poultry seasoning; pour over pork mixture. Top pork mixture with mashed sweet potatoes.
Bake pork casserole at 350° for 45 minutes.

"If all you have in the house is the ingredients listed, then go for it. If you enjoy food with almost no taste, then go for it. If you are a contestant on Iron Chef America, and the secret ingredient is listed above, and you want to win, you might want to pass on this one. Not a ""bad"" dish, but not one with any amount of pizzaz."
