Barbecued ribs with homemade barbecue sauce.

Ingredients:

  • 3 pounds loin back ribs
  • 1 teaspoon salt
  • 1/4 teaspoon freshly ground pepper
  • 2 teaspoons pickling spices
  • 1 large clove garlic, chopped
  • Barbecue Sauce, homemade (below) or purchased

Preparation:

Place ribs in large cooking pot; add salt, pepper, pickling spices and garlic. Add water to cover; bring to boil. Reduce heat; cover and simmer until ribs are tender, about 1 hour. Remove ribs from heat and allow to cool in liquid. Drain and refrigerate until ready to grill. Set ribs on preheated grill. Brush occasionally with sauce, grilling about 20 minutes, until ribs are well glazed. Serves 4 to 6.

Barbecue Sauce for Ribs

  • 1 cup applesauce
  • 2 tablespoons soy sauce
  • 1/4 cup honey
  • 1 teaspoon prepared mustard
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon instant coffee granules
Combine all ingredients; blend well. Glaze pre-cooked ribs frequently for about 20 minutes on the grill, turning several times.
