Spicy Grilled Spareribs With Chipotle Rub

Baste these tender spicy ribs with your favorite homemade or purchased barbecue sauce just before serving. Serve the ribs with coleslaw and mashed potatoes for a fabulous summer meal.

Ingredients:

  • 2 to 3 racks spareribs
  • ***Rub***
  • 2 tablespoons brown sugar
  • 1 tablespoon ground black pepper
  • 2 teaspoons onion powder
  • 1 tablespoon salt
  • 2 tablespoons chili powder
  • 1 teaspoon ground chipotle pepper

Preparation:

Heat oven to 350°. Line a large roasting pan with foil and spray with nonstick cooking spray or brush lightly with oil.

Cut ribs into 2-rib portions. Combine the brown sugar, pepper, onion powder, salt, chili powder, and chipotle pepper. Generously rub the ribs with the seasoning mixture and arrange the ribs, meaty side down, in the prepared roasting pan.

Bake the ribs, meaty side down, for 45 minutes. Turn and bake for 45 minutes longer. Brush with barbecue sauce and grill over medium coals for about 15 minutes.
Serves 4 to 6.

"This recipe was a cinch to make and we liked it. We served it with coleslaw and mashed potatoes as was suggested and had a pretty good dinner. This isn't a recipe that blows me away but it is a good, dependable recipe that was easy and inexpensive."
