Ingredients:
- 1 center cut pork loin rib roast, about 4 to 5 pounds
- ***
- Brine
- 3 cups cold water
- 1 1/2 cups orange juice
- 1/4 cup kosher salt
- 1/4 cup maple syrup
- 2 cups ice cubes
- ***
- Rub
- 2 tablespoons Creole seasoning
- 1/2 teaspoon ground black pepper
- 1/2 teaspoon ground cumin
- 3 tablespoons brown sugar
Preparation:
Put roast in a large food container or 2-gallon food storage/freezer bag. Combine brine ingredients and pour over the roast; move the container around to coat the pork thoroughly. Refrigerate for 24 to 36 hours.
Combine rub ingredients.
Remove pork roast from the brine and discard the brine. Place the roast on a rack in a roasting pan and rub all over with the seasoning rub mixture.
Preheat oven to 350°.
Roast for about 20 minutes per pound, to 160° on a meat thermometer or oven probe. Let rest for 10 minutes before carving.
