Ingredients:
- 1 smoked shoulder, 5 to 7 pounds
- 1 carrot, cut into chunks
- 1 large onion, cut into chunks
- 1 celery rib, cut into chunks
- 1 bay leaf

- Glaze:
- 1/4 cup light brown sugar, packed
- 1/4 cup orange marmalade
- 1 teaspoon dry mustard
Preparation:
Combine glaze ingredients, stirring until well blended. Spread glaze over the scored surface. Bake the smoked shoulder in a preheated 350° oven for about 20 to 30 minutes.
Serves 6 to 8 with leftovers.
