Pork Roast With Chutney Glaze

Pork Loin Roast With Chutney Glaze

Peach or mango chutney add flavor and texture to this delicious pork loin roast.

Cook Time: 2 hours

Ingredients:

  • 1 pork loin roast, boneless, about 3 to 5 pounds
  • salt and coarsely ground black pepper
  • herb seasoning blend, such as a garlic herb blend or fines herbes
  • -
  • Glaze
  • 1/2 cup mango or peach chutney
  • juice of 1 orange
  • 2 tablespoons lemon juice
  • 2 tablespoons butter

Preparation:

Trim excess fat from the pork loin; sprinkle with salt, pepper, and herb mixture. Insert a meat thermometer into the center of the roast. Roast to about 155° on the meat thermometer, about 1 1/2 to 2 1/2 hours, depending on size of roast.

Combine glaze ingredients in a small saucepan; heat to a simmer, stirring to blend. Brush all over the pork roast and continue roasting to 160°. Remove from oven and let stand for about 15 minutes before slicing the roast. Serve roast with remaining chutney mixture, if desired.
Serves 6 to 8.
