This smoked shoulder, also known as a smoked picnic, butt, or picnic ham, is made with a complementary variety of spices in the simple glaze.

Cook Time: 2 hours, 30 minutes

Total Time: 2 hours, 30 minutes

  • 1 smoked boneless pork shoulder (butt), about 2 1/2 pounds
  • 1/4 cup sugar
  • 1/4 cup molasses
  • 1/4 teaspoon cinnamon
  • 1/8 teaspoon ground allspice
  • 1/8 teaspoon ground ginger

Simmer smoked shoulder, covered, in water to cover in a large stockpot or kettle for 1 1/2 hours, or until tender; drain. Transfer pork to a shallow baking pan. In a small bowl, blend sugar with molasses and spices; brush half over meat. Bake pork at 325° for 20 minutes: brush with remaining molasses mixture and bake 25 minutes longer, or until nicely glazed.
