Roast Pork With Orange Glaze

Roast Pork With Orange Glaze ----- Large Roast Pork Loin Picture

This spiced pork loin roast is glazed with a sweet orange mixture just before it's done. Serve this roast with mashed potatoes or sweet potatoes and your favorite side vegetables.

Ingredients:

  • ***Orange Glaze***
  • 1/2 cup orange juice concentrate
  • 2 tablespoons corn syrup
  • 2 tablespoons light brown sugar, packed
  • ***Spice Mixture***
  • 3 cloves garlic, finely minced
  • 1 teaspoon salt
  • 1 scant teaspoon coarsely ground black pepper
  • 1/2 teaspoon ground cumin
  • dash cayenne pepper
  • 1/2 teaspoon dried leaf thyme
  • ***Pork***
  • 1 bone-in pork loin roast, about 5 pounds

Preparation:

Heat oven to 325°.

Combine orange glaze ingredients and refrigerate until needed.

Combine spice mixture ingredients and rub all over the pork. Place the pork on a rack in a baking dish. Roast for about 20 to 25 minutes per pound. When a meat thermometer registers about 145°, spoon the glaze mixture over the roast. Continue roasting to about 160°. Let the roast rest for 10 minutes.

Serves 6 to 8.
