Ingredients:
- 2 tbsp. vegetable oil
- 1 lb boneless pork cut up into cubes
- 1 large onion diced
- 2 cloves garlic chopped
- 1 packet taco seasoning
- 2 cans (14.5 ounces each) diced tomatoes
- 1 can diced tomatoes with green chiles
- 1/2 cup beef broth
- 1 can (12 ounces) corn
- 1 can (15 ounces) pinto beans
Preparation:
Heat oil in skillet, brown pork and onion and garlic. Transfer to slow cooker or crockpot. Add remaining ingredients and cook on low for 4-6 hours. Serve with corn bread; garnish with sliced ripe olives and sour cream.posted by Paula
