Spanish Pork Stew with Potatoes

Ingredients:

  • 1 pound lean pork shoulder (also known as pork butt)
  • 4 to 5 medium potatoes
  • 1 pound tomatoes, diced, canned or fresh
  • 1 green bell pepper, or use half green and half red
  • 2 tablespoons vinegar
  • 2 tablespoons vegetable oil
  • 3 garlic cloves, crushed
  • 1 cup chicken broth
  • 1 bay leaves
  • 1 medium onions, chopped

Preparation:

Cut pork into large chunks. Peel potatoes and cut into 1-inch pieces. Seed, core, and thinly slice bell pepper.

Heat oil in a skillet; brown pork, stirring to brown all sides. Layer all ingredients in crockpot in order given; cover and cook on LOW until meat is tender, about 9 to 10 hours.

very good. worth making again with a couple of twists. i would add a bit of salt and pepper when browning the meat and a bit to the broth, but not a lot. after about 8 hrs i added 4-4 inch stalks of fresh rosemary and the same amount of fresh sage. i also served over rice, which i sauteed with about 10-15 cardamon seeds and about the same # of cloves before adding chicken broth for liquid. would be very good with saffron rice also.
