Ingredients:
- 3 medium sweet potatoes, peeled and cut into 1 1/2-inch cubes
- 1 green bell pepper, cut into strips
- 1 cup whole kernel corn, frozen
- 1 medium onion, halved and thinly sliced
- 2 large cloves garlic, minced
- 1 1/2 pounds boneless pork shoulder, cut into 1-inch cubes
- 1 teaspoon chili powder
- 1/2 teaspoon ground coriander
- 1/2 teaspoon salt
- 2 cups water
- 1 can (10 ounces) Ro-Tel tomatoes, diced tomatoes with green chiles
- 1 cup frozen cut green beans, thawed
