Ingredients:
- 1 1/2 pounds pork tenderloin, trimmed of any fat and silver skin
- 1/4 cup light brown sugar, packed
- 1/4 cup orange marmalade
- 1/4 cup beef broth
- 1/4 cup red wine
- 1/4 cup dried apricots, chopped
- 1/4 cup raisins
Preparation:
Place tenderloin in a roasting pan. In a small saucepan, heat marmalade with brown sugar until sugar is dissolved; brush over pork. Add broth, wine, apricots and
raisins to the roasting pan. Cover and bake at 350° for about 45 minutes, or until pork is no
longer pink and a meat thermometer registers at least 150° in the center, basting
frequently with pan juices. Remove from oven and let stand for 5 minutes. Slice and serve with the
sauce and fruit spooned over top.
