cooking pork tenderloin, Member devildogger

For lisak_87 Tenderloins of any kind are best not overcooked as they are very lean and are not generally used as a braising cut. Braising is a cooking method generally used for less tender cuts with more connective tissue. Think pork butt. This is why many pork tenderloin recipes wrap the tender with bacon to help keep it from drying out. I think you'll have better results roasting the tender and the sauce on the side. Or you could baste the tender with the sauce as it roasts. And don't forget about carryover cooking. Very important with such a lean cut.
