Cook Time: 40 minutes
Ingredients:
- 6 large potatoes
- 1/2 pound butter, melted
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 cup heavy cream
- 1 cup shredded Swiss cheese
Preparation:
Cook potatoes about 20 minutes in boiling salted water. Let cool; peel potatoes. Mash just slightly to break up. Add butter, salt and pepper, combine and mix ingredients, gently stirring. Put into lightly buttered shallow baking dish. Pour heavy cream over potato and butter mixture. Let stand about 20 minutes. Sprinkle with cheese. Bake 15 to 20 minutes in 375° oven or until cheese is melted.Swiss potato casserole serves 4.
