Perogi Skillet Recipe

A perogi skillet recipe from our forum.

Ingredients:

  • 1 large can(or jar) of sauerkraut - 28-32 oz.
  • 1 large onion, chopped
  • 12 ounces butter or magarine
  • 1 large can mushrooms (8 ounces)
  • 1 pound spiral macaroni

Preparation:

Rinse sauerkraut with water in a colander; drain well. Put sauerkraut in pan with a small amount of water; simmer for about 1/2 hour. Melt half of the butter in frying pan and saute onion until soft. Add drained mushrooms and sauerkraut to onions. Add other 1/2 of butter. Saute uncovered for 1/2 hour. Cook spirals and drain. Mix in large serving bowl and serve. Can be fixed ahead of time and reheated in a 350° oven for 20-30 minutes.

Note from AFDON2000: People who don't usually like sauerkraut will like this. I've never made it when people haven't asked for this recipe. Goes great with an Easter ham and is a good potluck dish.
