A ham and potato casserole recipe with green peppers and cheddar cheese sauce.

Cook Time: 50 minutes

Ingredients:

  • 4 cups diced cooked potatoes
  • 1 3/4 cups diced ham
  • 1/2 cup chopped green bell pepper
  • 1/4 cup chopped diced pimiento
  • 3 tablespoons butter
  • 3 tablespoons flour
  • 1 1/2 cups milk
  • 1 cup shredded Cheddar cheese
  • 1/2 teaspoon paprika

"I used to make an awesome casserole such as this; however being overseas for so many years, I had not had the luxury of cooking for myself or anyone else. Since I do not have any recipes except in my head or stored in a unit somewhere, USA, I looked up a recipe for left over ham. This recipe is adequate if you've never done this before. I found the dicing of the potatoes the most hindering of the casserole. If you slice the potatoes thin and make more cream sauce or add more milk, this casserole would be adequate. There wasn't enough sauce for the potatoes to absorb and have a creamy consistency. As usual, with leftovers, there were some as no one wanted seconds. I reheated this again and out of politeness, one serving was taken."
