Cook Time: 50 minutes
Ingredients:
- 4 cups diced cooked potatoes
- 1 3/4 cups diced ham
- 1/2 cup chopped green bell pepper
- 1/4 cup chopped diced pimiento
- 3 tablespoons butter
- 3 tablespoons flour
- 1 1/2 cups milk
- 1 cup shredded Cheddar cheese
- 1/2 teaspoon paprika
Preparation:
Combine potatoes, ham, green pepper, and pimiento; transfer to a greased 1 1/2-quart casserole. In saucepan over medium-low heat, melt butter; blend in flour until smooth and bubbly. Gradually add milk; cook, stirring constantly, until thickened. Stir in shredded cheese and paprika. Season sauce with salt and pepper; pour over ham mixture. Bake at 350° for 35 to 45 minutes.Serves 4 to 6.
