Dried Beef and Potato Casserole

A potato casserole with dried beef.

Cook Time: 30 minutes

Ingredients:

  • 3 tablespoons butter
  • 3 tablespoons flour
  • 3/4 cup heavy cream
  • 1 can (about 16 ounces) peas, liquid reserved
  • 1 1/2 cups shredded dried beef
  • 1/4 teaspoon pepper
  • 3 cups sliced cooked potatoes
  • 1 teaspoon salt
  • 1/3 cup fine dry bread crumbs

Preparation:

Melt butter over medium-low heat in a medium saucepan. Blend in flour, stirring until smooth and bubbly. Gradually add heavy cream and liquid from peas. Cook, stirring constantly, until thickened. Add shredded dried beef and the peas.

In a greased casserole, arrange the sliced cooked potatoes; sprinkle with 1 teaspoon salt. Pour dried beef sauce mixture over potatoes. Top with bread crumbs. Bake at 375° for 20 minutes.
Serves 4.
