This potato puff recipe makes a great holiday side dish, and it's a nice change from everyday mashed potatoes.
- 8 cups potatoes, hot, mashed or riced
- 4 tablespoons melted butter
- 3/4 cup milk
- 2 large eggs
- 1 scant teaspoon salt
- 1/8 teaspoon pepper
- 3/4 cup shredded sharp or mild Cheddar cheese
- 4 green onions, thinly sliced
Mash hot mashed potatoes with butter, milk, eggs, salt, pepper, cheese, and onions. Beat until well blended. Pile into a buttered 2 to 2 1/2-quart baking dish. Bake at 350° for 35 to 45 minutes, or until puffed and nicely browned.
