Here's an easy potato casserole, made with sliced potatoes, heavy cream and a little butter, onion, and seasonings.


  • 4 medium baking potatoes, peeled, thinly sliced
  • 2 medium sweet onion, halved, thinly sliced
  • dried parsley flakes
  • herb seasoning blend
  • salt and pepper
  • 2 tablespoons butter, melted
  • 1/2 cup heavy cream


In an 8-inch baking dish, layer the potato slices and onions, sprinkling parsley, herb blend, and salt and pepper between the layers. Drizzle with the butter and pour cream over all. Bake at 350° for about 45 to 60 minutes, or until potatoes are tender.
Serves 4.

Awesome and easy, Member Kareneeb

I made some variations: I layered potatoes, onion, salt, pepper, garlic, chopped up leftover roast three times in a large casserole dish. Then poured 4 Tb of melted butter and 3/4 cup of half n half, then mixed some cream of mushroom soup with a little milk and poured it on top. I covered it with foil and cooked at 350 for an hour. This was GREAT!!!!
