Creamed potatoes are easy to make, with new potatoes and a tasty seasoned white sauce.
6 medium potatoes, scrubbed or peeled and cut in chunks
1 tablespoon butter
1 tablespoon flour
1 cup milk
salt and pepper
Cook potatoes in boiling salted water until tender. In a saucepan, melt butter over low heat; blend in flour until smooth. Gradually stir in the milk. Cook, stirring constantly, until thickened and smooth. Season with salt and pepper to taste. Drain cooked potatoes; transfer to a serving dish. Pour sauce over potatoes and sprinkle with paprika.
Serves 4 to 6.
