Caramelized sweet onions are mashed into these potatoes, along with a little garlic, cream, and other seasonings.

Ingredients:
- 4 large Russet potatoes or baking potatoes, peeled, sliced or cubed
- 6 tablespoons butter
- 1 large sweet onion, quartered then thinly sliced
- 1 small clove garlic, finely minced
- salt and pepper, to taste
- 2 to 4 tablespoons cream, half-and-half, or milk
- 1 to 2 teaspoons chopped fresh parsley
Preparation:
Put potatoes in a saucepan; cover with water. Bring to a boil, reduce heat, then cover and simmer for about 10 minutes, or until tender.
Meanwhile, heat butter in a large skillet; add the thinly sliced onion and garlic. Cook over medium-low heat, stirring occasionally, until onion is lightly browned, about 20 to 25 minutes. If browning too quickly, turn heat down.
Drain potatoes and add to the onion. Continue cooking, stirring, for about 10 minutes longer. Taste and adjust seasoning. Turn mixture into a bowl. Mash lightly with a hand-held masher, adding a little cream or milk, as desired. Sprinkle with chopped parsley before serving. Serves 4 to 6.
