Buttery Potatoes and Turnips with Green Onions

Turnips are an under appreciated vegetable. I think many people dislike them because they've eaten them overcooked. When cooked right, they are mild, though flavorful, and have a slight sweetness.

They pair beautifully with potatoes, and the butter brings them together in a sort of sauce. Sprinkled with green onions, these are always a hit!

Yield: 6

Ingredients:

  • 2 pounds potatoes (preferably baking), peeled and coarsely chopped
  • 1 1/2 pounds turnips, trimmed and coarsely chopped
  • 1/4 stick butter (4 tablespoons)
  • 1 teaspoon salt
  • 1 teaspoon white pepper
  • 1/2 teaspoon sugar
  • 1/2 cup sliced green onions (green and white parts)
  • 1/2 cup chopped fresh parsley

Preparation:

Bring a large saucepan full of water to a boil. When water is boiling, add the potatoes and turnips and return to a boil. Boil for 10 minutes or until vegetables are just fork-tender. Drain.

Melt the butter in a small saucepan and add the salt, pepper and sugar. When butter mixture is hot, pour over the hot vegetables and serve, sprinkled with green onions and parsley.
