Great tasting mashed Yukon gold potatoes are combined with sharp white Cheddar cheese. Serve these potatoes with roast beef or pork, or alongside just about any main dish.

Ingredients:
- 2 pounds Yukon gold potatoes, cut in 1-inch cubes
- 2/3 cup shredded white sharp Cheddar cheese
- 4 tablespoons butter
- 1/2 cup milk
- 1/2 teaspoon salt, or to taste
- 1/4 teaspoon ground black pepper
Preparation:
Put potato cubes in a medium saucepan and cover with water. Bring to a boil. Cover and reduce heat to a gentle boil and boil for about 15 minutes, or until potatoes are tender. Drain and transfer to a bowl. Add the remaining ingredients and mash well. Taste and adjust seasonings.
Serves 4 to 6.
