Large Picture of the Oven Fries
- 4 medium baking potatoes, Russets
- 3 to 4 tablespoons olive oil or Canola
- 1 1/2 teaspoons Creole or Cajun seasoning
Peel potatoes, if desired, then slice lengthwise into thin (between 1/4 and 1/2inches thick). Slice the slices into 1/4- to 1/2-inch strips.
Drizzle a little olive oil into the bottom of a large, shallow baking pan, such as a jelly roll pan. Spread the oil around to coat the bottom of the pan.
Dry potato strips and toss in a bowl with 2 to 3 tablespoons of olive oil. Sprinkle about half of the seasoning over the potatoes and toss. Repeat with remaining seasoning. Spread potatoes in a single layer in the baking pan.
Bake for about 12 minutes. Stir and turn the potatoes and continue baking for 8 to 10 minutes longer. Turn again and bake for about 10 minutes longer, pr until tender and nicely browned.
