Hot German Potato Salad Recipe

This is a flavorful hot German style potato salad, made with bacon, potatoes, and a tangy vinegar dressing.

Total Time: 15 minutes


  • 5 slices bacon, diced and cooked until crisp
  • 2 tablespoons bacon drippings
  • 1 1/2 tablespoons all-purpose flour
  • 1 tablespoon granulated sugar
  • 1 teaspoon salt
  • 1 tablespoon prepared mustard
  • 1/2 cup cider vinegar
  • 1/2 cup water
  • 4 cups sliced cooked potato


Cook bacon; set aside. Heat bacon drippings; blend in flour, sugar, salt and mustard. Gradually add vinegar and water, stirring constantly until smooth. Continue cooking over low heat, stirring, until thickened. Add potato and heat through, gently stirring to mix. Sprinkle with reserved bacon.
Serves 4.

This is a quick and easy recipe! Red potatoes were pressure cooked while frying bacon and preparing sauce. Complete with a warm Rueben sandwitch(I used sourdough bread with bavarian saurkraut) and sweet tea. You might need to spritz your face with water to look like you worked so hard on the preparation. My husband is part German and he loved it.
