Ingredients:
- 1 ea small bag red potatoes
- 1/4 c finely chopped onion
- 1/4 c finely chopped celery
- 1 ea dill pickle finely chopped
- 2 T parsley flakes
- 6 ea strips bacon cooked crumbled
- 1 ts salt to taste
- 1/2 ts pepper
- 2 T red wine vinegar or balsamic vinegar
- 2 T vegetable oil
- 1 c mayonnaise
Preparation:
Peel and cube your potatoes and cook until fork tender - drain and cool. In a separate bowl mix all the dressing ingredients - taste as you go cause you might need more salt or vinegar.
