Crockpot Potato Soup Recipe

Top this potato soup with chopped chives or parsley, or top with bacon bits or grated cheese for a heartier soup.

Ingredients:

  • 6 medium potatoes, peeled and diced
  • 2 leeks, washed, sliced, including white and light green
  • 1 cup chopped onion
  • 1 carrot, scraped and diced
  • 1 stalk celery, sliced
  • 1 tablespoon dried parsley flakes
  • 4 cups chicken broth
  • 1 to 1 1/2 teaspoons salt, or to taste
  • pepper
  • 2 tablespoons butter
  • 12 ounces evaporated milk (1 1/2 cups)
  • chopped chives or parsley for garnish, optional

"I made this as my first crock-pot recipe--ever! It was very hearty and delicious! My family enjoyed it! I had quite a bit of leftovers from this batch; I froze a container and the other container I converted into a ""french onion"" soup with parm cheese and croutons. This recipe is well worth the time it takes to clean the leeks!"
