Baked Potato Soup
A baked potato soup with butter, green onions, bacon, cheddar cheese sour cream, and seasonings. Serve this delicious, hearty potato soup with crusty rolls and a simple tossed salad for a fabulous soup supper.

Cook Time: 15 minutes

Total Time: 15 minutes

Ingredients:

  • 2/3 cup butter
  • 2/3 cup flour
  • 7 cups milk
  • 4 large baking potatoes, baked, cooled, peeled and cubed, about 4 cups
  • 4 green onions, thinly sliced
  • 10 to 12 strips bacon, cooked, drained, and crumbled
  • 1 1/4 cups shredded mild cheddar cheese
  • 1 cup (8 ounces) sour cream
  • 3/4 teaspoon salt
  • 1/2 teaspoon pepper

Preparation:

In a large Dutch oven or stockpot over low heat, melt butter. Stir in flour; stir until smooth and bubbly. Gradually add milk, stirring constantly, until sauce has thickened. Add potatoes and onions. Continue to cook, stirring constantly, until soup begins to bubble. Reduce heat; simmer gently for 10 minutes. Add remaining ingredients; stir until cheese is melted. Serve baked potato soup immediately.

I used about 10 reg. sized potatoes, baked, instead of the larger ones. It was perfect. The only thing lacking in this recipe is the instruction that after you whisk the butter/flour to a bubble and add the milk in, you need to turn the heat up and get it going so it will start to thicken. I left it on Low as it instructed for a long time and it never got hot or thickened. I finally turned it up to a little over medium. Once it bubbled, I turned it down and let it simmer on low for 10 minutes per the recipe. (Now don't turn it up too high or the milk might scald.) Also, I left out the onions and added some bacon grease and lots of salt and pepper. I'm not sure why the recipe doesn't call for salt/pepper. It needs it! We put the crumbled bacon on top. I love this soup. I will definitely make it again! My husband & 10 yr. old daughter really loved it which made me happy. This serves about 6 generous helpings.
