Best Potato Soup

A favorite from a forum member, made with potatoes, ham, and soup mix, along with plenty of veggies and cheese.

Ingredients:

  • 6 cups water
  • 3 to 4 large potatoes
  • salt
  • 1/2 cup green onions
  • garlic
  • 1 1/2 cups cubed cooked ham
  • parsley
  • 1 cup corn kernels
  • 1/2 cup chopped carrots
  • 4 tablespoons butter
  • 1/2 cup chopped celery
  • 1/2 red bell pepper, chopped
  • 1 cup broccoli flowerets
  • 1 cup potato soup mix, Bear Creek
  • Velveeta cheese, see instructions

Preparation:

Put about 6-8 cups of water in pot. Bring to a boil and add peeled 1" chopped potatoes and salt. I used 3 BIG potatoes but you can adjust however many you want in your soup. I added; 1/2 cup chopped green onions,a little garlic, 1 1/2 cups of 1/2" cubes of chopped ham, parsley, 1 cup corn, 1/2 cup chopped carrots, 1/2 stick of butter, 1/2 cup chopped celery, 1/2 red bell pepper, chopped, about 1 cup of tiny flowerets of fresh broccoli, 1 cup of "Bear Creek" Potato soup mix (from Sams). I let this simmer for about 30-40 minutes. Then I added 2 inches of Velveeta cheese in cubes and let it melt. This turned out wonderful, best we have ever eaten.

Best Potato Soup is really Best!October 29, 2007By hitthomemom
"My family and I really liked this potato soup. All my children and husband ate two bowls each. We followed the recipe as it was written except we added twice as much cheese. I would cook the potatoes longer before adding the rest of the ingredients next time. We also added salt to our taste. Very good, a keeper recipe!"
