Potato Sausage Soup - Toscana Soup

This potato soup with sausage is similar to the Olive Garden's famous Toscana soup.

Cook Time: 25 minutes

Total Time: 25 minutes

Ingredients:

  • 3 links sweet Italian sausage
  • 2 medium baking potatoes, cut in half lengthwise
  • 2 to 3 slices bacon, diced
  • 3/4 cup onions, diced
  • 1 medium to large clove garlic, minced
  • 2 cups escarole, chopped, or kale, cut in half, then sliced
  • 2 tablespoons chicken base
  • 4 cups water
  • 1/2 cup whipping cream

Preparation:

Remove sausage from casings; brown in a skillet, breaking up, until cooked through.

Place onions and bacon in a large saucepan and cook over medium heat until onions are tender. Add garlic and cook 1 minute longer. Add chicken base, water and potatoes, simmer 15 minutes. Add sausage, kale and cream. Simmer 4 minutes and serve. Serves 5.

Better than Olive Garden!, Member susanlocklear

I have now made this several times, and each time it has been delicious. I have always used sweet Italian sausage and always some variety of spinach, not kale. But I have had success with both fresh and frozen spinach, even frozen creamed spinach! One note about improvising, though, stick to a russet or baking potato. Other types, like red or eastern, just don't work as well in this soup. One other great thing about this soup...it goes together so quickly, you can actually make it after work and still eat at a reasonable time!
