Pot Roast with Red Wine

Browning the pot roast enhances the flavors, but you can skip that step if you're in a hurry.

Cook Time: 3 hours

Ingredients:

  • 3 pound pot roast
  • 3 ounces of salt pork, blanched and diced
  • salt and pepper
  • 1 cup dry red wine
  • 1 large onion, quartered and sliced
  • 1 bay leaf
  • 1 small clove garlic, minced
  • all-purpose flour

Preparation:

Brown meat on all sides with the salt pork in a heavy stock pot or Dutch oven. Sprinkle with salt and pepper; add remaining ingredients. Cover and simmer for 3 to 4 hours. Remove meat and thicken liquid with a paste made from equal amounts of flour and water. Taste and adjust seasoning.
Serves 4.
