Cook Time: 3 hours
Ingredients:
- 3 pound pot roast
- 3 ounces of salt pork, blanched and diced
- salt and pepper
- 1 cup dry red wine
- 1 large onion, quartered and sliced
- 1 bay leaf
- 1 small clove garlic, minced
- all-purpose flour
Preparation:
Brown meat on all sides with the salt pork in a heavy stock pot or Dutch oven. Sprinkle with salt and pepper; add remaining ingredients. Cover and simmer for 3 to 4 hours. Remove meat and thicken liquid with a paste made from equal amounts of flour and water. Taste and adjust seasoning.Serves 4.
