Barbecued Pot Roast

Pot roast recipe with homemade barbecue sauce.

Ingredients:

  • 1 pot roast, about 4 pounds
  • 2 teaspoons salt
  • 1/4 teaspoon pepper
  • 2 tablespoons butter
  • 1/2 cup water or beef broth
  • 1 can (8 ounces) tomato sauce
  • 2 medium onions, sliced
  • 2 cloves garlic, crushed and minced
  • 2 tablespoons brown sugar
  • 1/2 teaspoon dry mustard
  • 1/4 cup vinegar
  • 1/4 cup ketchup
  • 1/4 cup lemon juice
  • 2 teaspoons Worcestershire sauce

Preparation:

Rub roast with salt and pepper. Brown on all sides in melted butter over medium-low heat. Add water, tomato sauce, sliced onions, and crushed garlic. Cover and cook over low heat for 1 1/2 hours. Mix remaining ingredients together and pour over pot roast. Simmer for 1 1/2 hours longer, or until very tender. Serve with hot buttered noodles or mashed potatoes, along with green beans or asparagus.
