Pecan Pralines

  • 2 cups brown sugar, firmly packed
  • 1/4 cup water
  • 1/4 cup evaporated milk
  • 2 cups pecan pieces and halves
  • 2 teaspoons vanilla
  • 3 tablespoons chilled butter, cut in pieces


Combine sugar, milk, and water in a 2-quart saucepan; heat to boiling stirring constantly. Cook until mixture reaches soft ball consistency (235°).Remove from heat; stir in pecans, vanilla, and butter. Immediately drop by tablespoons onto wax paper.

Runny pralines, Member 1990Stephanie

This was my first attempt and I'm terribly disappointed. My thermometer said 260 but the sugar/water/evaporated milk didn't look stiff enough. I used a tablespoon as directed to drop them onto a cool surface and they just ran all over. There has to be something missing in this recipe. I'm sure glad I didn't need the resulting ""sugar pecans"" for Christmas gifts as I originally planned!
