Southern Thighways - Recipes for Chicken Thighs

There are plenty of cookbooks devoted to low-fat chicken breasts and hundreds for chicken overall, but none focus on the meaty, tasty chicken thigh -- until now.

About the Cookbook

Sara Gibbs, Chef at the unique Louisville, KY restaurant, "Lynn's Paradise Café," has had her food featured in several magazines and on TV, and she recently did the box lunches for a Southern Foodways Symposium. I had the opportunity to meet and speak with Sara at a past symposium, and recently enjoyed lunch at the popular Louisville restaurant, so I was especially excited about this cookbook.

Chicken thighs are probably the most flavorful part of the chicken, certainly deserving of a cookbook of their own. This wonderful illustrated cookbook is such a delight to browse, and all of the recipes (many are pictured) are tempting and unique.

The Recipes

The book is broken down into sections for breakfasts and light meals, soups and stews, and evening meal recipes. Though small in size, the cookbook is packed with great recipes. Recipe titles include Scarlet Rice with Chicken, Comfort Quesadillas with Southern Comfort® Pepper Jelly Sauce, Chicken-for-Breakfast Strips, Bourbon Chicken Corn Chowder, Smokin' Thighs Cornbread Salad, Oven Fried Chicken Salad, Purple Hull Peas & Rice, Braised Chicken Thighs on Bluegrass Summer Succotash, Chicken and Twice-a-Year Noodles, Swanton Picnic Chicken, Aunt Louise's Chicken Soup with Slipdowns (dumplings!) and many more.

Along with the recipes, almost every page has a Cook's Secret, helpful tip, or just a bit of friendly advice. I particularly loved the "Well, I Declare!" exclamations on some pages, pointing out cautions, facts, or interesting food history.

You'll want a copy for yourself and another to give as a gift.
