Chocolate Pudding

  • 3 squares unsweetened chocolate (3 ounces)
  • 3 cups milk
  • 1/4 cup cornstarch
  • 1/2 cup sugar
  • 1/4 teaspoon salt
  • 1 teaspoons vanilla extract


In a saucepan, cook 2 2/3 cups of the milk with chocolate, stirring until chocolate is melted and milk is scalded.

In a medium bowl mix cornstarch, sugar and salt; stir in remaining 1/3 cup milk. Add to scalded milk and chocolate mixture and cook over low heat, whisking constantly, until thickened and smooth. Continue cooking, stirring, for about 5 minutes. Cool slightly; stir in vanilla and pour into serving dishes. Chocolate pudding recipe serves 6.

Healthy Chocolate Pudding, Member FlamingFury

I love chocolate pudding, but I'm trying to get more healthy foods into my diet and avoid things like preservatives, fillers, and GMO foods. I started with this recipe but made the following changes. Instead of dairy milk, I used coconut milk. Instead of sugar, I used 1/4 cup of Xylitol (costly but half the calories of sugar, safe for diabetics and easier on the teeth than sugar). My cornstarch is GMO free. For the chocolate I used 72% dark Belgian chocolate from Trader Joe's. This bar is 17.6 oz and molded into 40 little squares. Turns out 6 squares weigh 2.8 oz and 7 weigh 3.2 oz---so I opted for the 7. Otherwise, it made up exactly the same. Since I had some flaked coconut handy, I also threw in about 1/3 cup of that. Took maybe 2 minutes longer than a box of prepared pudding mix, but OH! the difference in taste! This is so rich that I'll never buy prepared mix again! Make it again? You bet!
