This recipe was from a friend of my mother's - always a favorite in my family. The recipe for Woodford Pudding found in Southern Cuisine section is the closest to mine, of any I've found. Always curious about the name, I was delighted to find that it originated in Woodford County, KY.
Since fermented jelly seems to be a thing of the past, I've used just about any tart jelly or preserves - currant, apricot, blackberry.
Ingredients:
- 1 c. sugar
- 1/2 c. butter
- 2 eggs
- 3/4 c. flour

- 1 pinch salt
- 1 t. soda
- 1 t. nutmeg
- 1 t. allspice
- 1 t. cinnamon
