Light Chocolate Pudding

Light Chocolate Pudding

This pudding is made with part coffee and 1% milk, making it relatively light, around 103 calories for a 1/3-cup serving.

Prep Time: 5 minutes

Cook Time: 8 minutes

Total Time: 13 minutes

Yield: Serves 6

Ingredients:

  • 4 tablespoons unsweetened cocoa
  • 1/3 cup granulated sugar
  • 1/4 cup flour
  • 1 1/2 cups 1% milk
  • 1/2 cup strong brewed coffee or espresso
  • 1 1/2 teaspoons vanilla extract
  • 1 teaspoon butter

Preparation:

In a medium saucepan, whisk together the cocoa, sugar, and flour. Gradually whisk in the milk and coffee or espresso. Place the pan over medium heat and cook, stirring, until the pudding is thickened and bubbling. Remove from the heat and stiir in the vanilla and butter.

Spoon into individual serving dishes, cover with plastic wrap, and refrigerate until serving time.

Serves 6.
