Pulled Pork Sandwich

There are several versions of pulled pork for the slow cooker, and this is a popular choice. The pork shoulder is slow cooked to perfection, shredded or chopped, then a little vinegar and barbecue sauce are added, making a tender and delicious sandwich filling. Serve the pulled pork sandwiches with coleslaw -- great as a dressing for the sandwich or on the side -- and baked beans, along with sliced dill pickles and other favorite salads.

Yield: Serves 8

Ingredients:

  • 1 Boston butt or pork shoulder roast
  • 1 large onion, quartered and sliced
  • salt and pepper to taste
  • garlic powder
  • 1 cup barbecue sauce, your favorite
  • 1/2 cup vinegar
  • a teaspoon or two of liquid smoke, if desired

Preparation:

Place pork roast in the crockpot; add chopped onion, salt and pepper and a generous sprinkling of garlic powder. Cover and cook on low for about 9 to 11 hours, or until very tender and shreddable. Drain all juices off and shred or chop pork; add vinegar and bbq sauce (and liquid smoke, if using). Continue cooking on high for about 1 hour. Serve with buns and tangy coleslaw for topping.
About 8 to 10 generous servings.

Delicious!, Member labein

I added about a cup of water to the bottom right at the beginning, but otherwise I followed the recipe (without the Liquid Smoke). We used Sweet Baby Ray's Hickory and Brown Sugar BBQ sauce. This recipe was tremendous! And SO easy. We'll be doing it again soon. Perfect for leftovers, too. This was absolutely delicious.
